Oaxaca Tasting Menu

Caracol's menus are culinary tours along the Mexican coasts, shared by 16 of the country's coastal states. To further spotlight the wide variety of dishes between states, we are introducing a tasting menu series. Each optional tasting menu is featured for a month, showcasing a specific coastal state. Join us for this month's tasting menu based on Oaxaca!


History & Background

Oaxaca, located in southern Mexico, is bordered by Guerrero and Puebla to the north, Chiapas and Veracruz to the east, and the Pacific Ocean to the south. The region's fertile valleys and rugged mountain ranges have long been home to Indigenous communities such as the Zapotecs and Mixtecs, whose cultures continue to shape local traditions. Celebrated as Mexico’s gastronomic capital, Oaxaca is the birthplace of squash and corn, famed for its mole, chocolate, and mezcal. Its cuisine is deeply rooted in Indigenous culinary heritage, featuring dishes like tlayudas, tamales, tetelas, and memelas, and emphasizing ingredients such as diverse chiles, hoja santa, poleo, and insects. Chocolate is a cherished treat and a key ingredient in many moles, often made from rare cacao varieties like Criollo, which accounts for just 0.01% of global cacao production.
