To spotlight the diversity of regional flavors, we’re introducing a monthly tasting menu series—each one dedicated to a different coastal state. This September, in honor of Mexico’s Independence Month, we invite you to experience Jalisco through a special tasting menu!
History & Background
Jalisco, located in western Mexico along the Pacific coast, is considered the cultural heart of the nation. It is the birthplace of mariachi music, tequila, and charrería (Mexican rodeo), traditions that have become iconic symbols of Mexican identity worldwide. The state’s capital, Guadalajara, blends colonial architecture with modern innovation, while its lakes, mountains, and beaches showcase Jalisco’s natural beauty. Jalisco’s cuisine is equally vibrant—birria, tortas ahogadas, pozole, tostadas de mariscos, and carne en su jugo are beloved dishes that highlight the state’s depth of flavor. Its fertile valleys and agave fields not only produce tequila but also an abundance of fruits and chiles. This menu celebrates Jalisco’s proud culinary heritage—an enduring source of flavor, festivity, and tradition.
