History & Background
Tabasco, in southeastern Mexico along the Gulf, is a land of rainforests, rivers, and ancient heritage. As the cradle of the Olmec civilization, its history shines through archaeological sites and vibrant traditions. Villahermosa, the capital, bridges modern life with natural beauty, surrounded by wetlands rich in wildlife.
The cuisine reflects its fertile land and waterways: robalo a la tabasqueña, grilled pejelagarto, river shrimp, tamales with chipilín, and the grand zacahuil. Plantains, cacao, corn, and tropical fruits infuse Tabasco’s dishes with flavor and warmth. This menu honors the state’s proud culinary heritage, alive with tradition and festivity.
