History & Background
Guerrero stretches along Mexico’s Pacific coast, where rugged mountains descend into blue waters and tropical valleys link lively ports with quiet fishing villages. From Acapulco’s shimmering bay to Taxco, the “Silver City” known for its long tradition of silver mining, and the calm shores of Zihuatanejo, the state reflects deep Indigenous roots and a vibrant blend of coastal and mountain traditions. Food in Guerrero is generous, soulful, and meant for gathering. Tiritas de Pescado celebrates the day’s catch, while Huaxmole, Pozole Verde, and Pescado a la Talla showcase bold regional flavor. Mezcal, distilled from native agave, captures the smoky essence of Guerrero’s highlands, and tropical fruits like mango, guava, and papaya add brightness to its cuisine. This menu honors Guerrero’s Pacific heart, mountain heritage, and enduring tradition of turning humble ingredients into festive, heartfelt dishes.
