To spotlight the diversity of regional flavors, we’re introducing a monthly tasting menu series—each one dedicated to a different coastal state. This January, we invite you to experience the cuisine of Colima through a special tasting menu!
History & Background
Colima, Mexico’s smallest state, rests along the country’s central Pacific coast, bordered by Jalisco to the north and east and Michoacán to the south. Shaped by fertile coastal plains, a tropical climate, and the ever-present Volcán de Fuego, the region’s cuisine reflects a deep connection between land and sea rooted in Indigenous traditions from communities such as the Nahua and Purépecha. Colima is celebrated for its fresh seafood, tropical fruits, and corn-based dishes, with preparations that honor simplicity and natural flavor. Signature dishes like sopitos, pozole seco, and enchiladas dulces highlight the state’s rich culinary identity, alongside ingredients such as coconut, lime, and guava. Seafood remains central to the table, often prepared with restraint to let its natural qualities shine. We hope you enjoy this menu and our interpretation of Colima’s distinctive and storied cuisine.
