History & Background

Chiapas, located in southern Mexico, is bordered by Oaxaca to the west, Tabasco to the north, Veracruz to the northwest, and Guatemala to the east and south, with a landscape of highland valleys, dense jungles, and river systems. This terrain has shaped a cuisine deeply rooted in Indigenous traditions, particularly those of the Maya, whose influence remains central to the region’s culinary identity. Over time, Spanish ingredients and techniques blended with these practices, creating a cuisine that is both complex and enduring.

Known for its moles, heirloom corn, and fragrant herbs, Chiapas offers a vibrant approach to Mexican cooking. Dishes like tamales de chipilín, cochito horneado, and sopa de pan reflect a balance of earthy, savory, and subtly sweet flavors. Ingredients such as cacao, annatto, and tropical fruits play an essential role, while highland coffee is among the most celebrated in Mexico. Rooted in tradition and shaped by its natural abundance, the cuisine of Chiapas is expressive and deeply connected to its heritage.
