Campeche Tasting Menu

Caracol’s menus are culinary tours along Mexico’s coasts, shaped by 16 coastal states. To spotlight the diversity of regional flavors, we’re introducing a monthly tasting menu series—each one dedicated to a different coastal state. This July, we invite you to experience the cuisine of Campeche!


History & Background

Located along México’s Gulf Coast on the western side of the Yucatán Peninsula, Campeche has been shaped by the sea, Maya heritage, colonial history, and generations of regional cooking. Its cuisine brings together Maya techniques, Spanish influences, and Caribbean flavors, with seafood at the center of many dishes. Shrimp, fish, octopus, and shellfish are often paired with citrus, achiote, chiles, tomatoes, coconut, and local herbs.

The state’s colorful capital, San Francisco de Campeche, is known for its fortified walls and historic port, reminders of its importance in Gulf trade. From bright seafood preparations to comforting soups and tropical desserts, Campeche’s food tells the story of a coastal region where history, culture, and local ingredients come together in every course today.
